Moroccan Quinoa Salad

This week we got a box of meat, fruit & veg from Foodbox and I have been enjoying whipping up amazing food with such fresh ingredients! My favourite from this week so far was a Moroccan Quinoa Salad I made which we had with Roast Chicken – I have also been having the leftovers with a poached egg on top for lunch! I had lots of interest from Instagram Stories so here is the recipe!

Moroccan Quinoa Salad

Ingredients:
1 Cup Quinoa
2 Cups Water
1 heaped Tablespoon Pepper & Me Moroccan Paste
1 Head Brocolli – diced (including stalk)
1 large Carrot – grated
1 large Brown Onion – diced
1/2 Cup grated Tasty Cheese
1/2 a Lemon – juiced
Olive Oil (same amount as the lemon juice)
1/4 Cup Best Foods Mayo
1 teaspoon Pepper & Me Man Grind

Method:

  • Cook your Quinoa by putting it in a pot with the water and Moroccan Paste, bring it to the boil then turn it down to a simmer and cover. Cook for 10-15 minutes or until the liquid has all be absorbed and the Quinoa is still firm but cooked.
  • Add your diced Broccoli and Onion to a bowl with the grated Carrot and Cheese. Add the cooked Quinoa (I cool mine a little before adding but this isn’t totally necessary) – mix to combine.
  • Combine the Lemon Juice, Oil, Mayo and Man Grind together then mix through the salad.
  • Enjoy!
